Ingredients
- 2 cups Greek yogurt
- 1 bunch fresh coriander, chopped
- 2 cups fresh spinach, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cumin
- 1/4 cup walnuts, chopped (optional)
Instructions
- In a large bowl, mix yogurt with salt and let it sit for 10 minutes to draw out excess water.
- Heat olive oil in a pan over medium heat. Add garlic and sauté until fragrant (about 30 seconds).
- Add spinach to the pan and cook until wilted, about 2-3 minutes. Remove from heat and let cool.
- Drain any excess liquid from the yogurt, then add the cooled spinach mixture.
- Add chopped coriander, black pepper, and cumin. Mix well to combine.
- Transfer to a serving bowl and garnish with chopped walnuts if using.
- Chill for at least 30 minutes before serving to allow flavors to meld.
