Delicious Borani Dip

Ingredients

  • 2 cups Greek yogurt
  • 1 bunch fresh coriander, chopped
  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 1/4 cup walnuts, chopped (optional)

Instructions

  1. In a large bowl, mix yogurt with salt and let it sit for 10 minutes to draw out excess water.
  2. Heat olive oil in a pan over medium heat. Add garlic and sauté until fragrant (about 30 seconds).
  3. Add spinach to the pan and cook until wilted, about 2-3 minutes. Remove from heat and let cool.
  4. Drain any excess liquid from the yogurt, then add the cooled spinach mixture.
  5. Add chopped coriander, black pepper, and cumin. Mix well to combine.
  6. Transfer to a serving bowl and garnish with chopped walnuts if using.
  7. Chill for at least 30 minutes before serving to allow flavors to meld.
